Executive Sous Chef, Colin Sato
Following his graduation from KCC, Colin Sato began working at a variety of restaurants including L'Uraku, 3660 On The Rise, Alan Wong's, Trump Waikiki, The Modern Honolulu and Momo Burger food truck. He started at Azure Restaurant, the culinary landmark at The Royal Hawaiian in late 2013. Under the mentorship of Executive Chef Colin Hazama, Sato honed his skills in the kitchen and was given opportunities to create new menu items for the Mai Tai Bar and Surf Lanai. In September of 2018 Sato was promoted to the position of Chef de Cuisine at the Moana Surfrider's signature restaurant - Beachhouse at the Moana.
In 2020, Sato helped the Sullivan Family of Companies and Foodland launch its first restaurant in the Metro Honolulu area, et al., located in Kahala MKT. In early 2021, he returned to the Moana Surfrider, A Westin Resort & Spa to assume his current position as Executive Sous Chef.
Sato cites Chefs Alan Wong and Wade Ueoka as those who influenced him in his career, and helped to change the way he looked at food. According to Sato, both Chefs Wong and Ueoka always asked the up-and-coming Sato how he could make a dish better, and encouraged him not so settle, but to always strive for greatness.
Patrick Okubo, Master Sommelier
Pat Okubo is a Master Sommelier with the Court of Master Sommeliers, one of 269 worldwide (172 in America), and also a Certified Wine Educator (CWE) with the Society of Wine Educators. Born and raised in Kaimuki he graduated from University High School in 2000. He holds a Bachelors in TIM (Travel Industry Management) from University of Hawaii and a Masters in Organizational Development and Change from Hawaii Pacific University. He is retired from Hawaii Army National Guard with 21 years of service.
Pat is the Fine Wine Specialist and Wine Educator for RNDC (Republic National Distribution Company). Previously, he opened Formaggio Grill as Managing Partner and Wine Director/Restaurant Manager at Four Seasons Lana'i.
He is the Chair and founder of Aloha Wine Foundation non-profit organization with a mission to unite, educate, and inspire the Hawaii sommelier community.
